Herbed Vinegars

Herbed vinegars are also easy to make from fresh herbs--just cover the fresh herb leaves with vinegar and allow steep for at least a week. These can then be used for vinaigrettes: 1/4 c. herbed vinegar + 1/2 c. olive oil + 2 cloves minced garlic + 1/4 tsp salt. (Basil vinegrette is particularly nice.)
